Kárpos started with a simple frustration: the produce reaching Santorini had spent a week in trucks and warehouses before anyone tasted it. So we cut the chain. We buy direct from forty-odd family farms across Crete, agree a fair price face to face, and move the harvest ourselves.
No auction houses, no anonymous distributors, no produce picked green to survive the journey. Just growers we know by name and food that still remembers the soil.
